Breakfast Scramble
Ingedients
Avocado spray
1/4 cup onion, chopped
1 cup zuccini, chopped
1/2 cup mushrooms, sliced
2 cups spinach
1/2 avocado
2 eggs, whisked
Jalapeño peppers, sliced
Salt and pepper
Sriracha sauce
Instructions
Spray avocado oil into a pan.
Sauté the onion until lightly brown.
Add the zucchini and mushrooms, sauté for 3-5 minutes.
Add 2 whisked eggs to the pan.
Scramble eggs together with the veggies.
Add the spinach and sauté for 1 minute.
Serve on a plate.
Top with avocado, jalapeño peppers, salt and pepper, and sriracha sauce.
