Breakfast Scramble

Ingedients

  • Avocado spray

  • 1/4 cup onion, chopped

  • 1 cup zuccini, chopped

  • 1/2 cup mushrooms, sliced

  • 2 cups spinach

  • 1/2 avocado

  • 2 eggs, whisked

  • Jalapeño peppers, sliced

  • Salt and pepper

  • Sriracha sauce

Instructions

  1. Spray avocado oil into a pan.

  2. Sauté the onion until lightly brown.

  3. Add the zucchini and mushrooms, sauté for 3-5 minutes.

  4. Add 2 whisked eggs to the pan.

  5. Scramble eggs together with the veggies.

  6. Add the spinach and sauté for 1 minute.

  7. Serve on a plate.

  8. Top with avocado, jalapeño peppers, salt and pepper, and sriracha sauce.
